Incredible Cabbage Soup

The healing qualities of this soup are tremendous.

Ingredients:

2 quarts water
1/2 head cabbage, (chopped)
1 teaspoon salt (more for taste)
3 tablespoons olive oil
1/2 onion, (chopped)
4 teaspoons chicken bouillon granules
1 can stewed tomatoes, (drained and diced)
1/2 teaspoon ground pepper, (more for taste)
2 cloves garlic

Directions:

  1. Pour oil into a large stockpot and bring to medium heat. Once hot, add onions and garlic. Cook for 5 minutes. (Onion should be transparent)
  2. Add salt, water, pepper and chicken bouillon granules to pot. Increase heat and bring to a boil.
  3. Add cabbage to pot and then reduce heat to a simmer and cook for 10 minutes. (Cabbage should wilt)
  4. Return pot to a boil. Add diced tomatoes and reduce heat to a simmer. Cook for 20-30 minutes, stirring often.
