Linguine with Tuna

Serves 4 | 
The perfect dish for a special occason.

Ingredients:

1 lb dried linguine
1/2 cup extra-virgin olive oil
1 cup chopped onions
3 cloves garlic, finely chopped
1/2 teaspoon salt, more for boiling water
1/4 teaspoon ground black pepper
1 1/2 lb tuna, cooked and shredded
1/3 cup drained capers
1/2 cup chopped fresh flat-leaf parsley

Directions:

  1. Fill a medium pot with water. Add salt and bring to a boil. After boiling, add linguine and cook until al dente. Reserve 1 cup water, then drain the remaining water and return pasta to pot.
  2. Pour olive oil in a large skillet. Turn to high heat. Once hot add onions and garlic, season with salt and pepper. Cook for 6 minutes. Stir frequently.
  3. Add tuna, capers and reserved water to skillet. Cook for 5 minutes. Stir frequently.
  4. Pour skillet ingredients into pasta pot and toss together. Serve immediately.
