Linguine with Tuna

Serves 4 |
The perfect dish for a special occason.
|1 lb dried linguine|
|1/2 cup extra-virgin olive oil|
|1 cup chopped onions|
|3 cloves garlic, finely chopped|
|1/2 teaspoon salt, more for boiling water|
|1/4 teaspoon ground black pepper|
|1 1/2 lb tuna, cooked and shredded|
|1/3 cup drained capers|
|1/2 cup chopped fresh flat-leaf parsley|
- Fill a medium pot with water. Add salt and bring to a boil. After boiling, add linguine and cook until al dente. Reserve 1 cup water, then drain the remaining water and return pasta to pot.
- Pour olive oil in a large skillet. Turn to high heat. Once hot add onions and garlic, season with salt and pepper. Cook for 6 minutes. Stir frequently.
- Add tuna, capers and reserved water to skillet. Cook for 5 minutes. Stir frequently.
- Pour skillet ingredients into pasta pot and toss together. Serve immediately.
