Halibut with Herb-Almond Crust

Serves 4 | 
A perfect seafood dish to make at home.

Ingredients:

1/3 cup plain yogurt
1 egg white
1 tablespoon Dijon style mustard
2/3 cup breadcrumbs
1/4 cup finely choppedalmonds
1 tablespoon chopped fresh oregano
1 tablespoon chopped fresh mint
1/4 teaspoon salt
1/4 teaspoon ground pepper
1 1/4 lb. halibut, cut into quarters
4 lemon wedges

Directions:

  1. Preheat oven to 400° F. Grease a baking sheet with cooking spray.
  2. In a medium bowl, combine yogurt, egg white and mustard and whisk until creamy. In a separate shallow dish combine the breadcrumbs, almonds, oregano, mint, salt and pepper.
  3. Dip each piece of fish in the crumb mixture, then in the yogurt mixture, and once again in the crumb mixture. Place on the baking sheet.
  4. Bake for 12-15 minutes, until lightly browned and flaky. 
  5. Place halibut on serving plates and serve with lemon wedges.
