Fresh Tomatoes With Angel Hair Pasta

Serves 4 | 
A delightfully tangy and slightly sweet pasta dish.

Ingredients:

1 package angel hair pasta
4 tomatoes, on the vine, chopped
1/4 cup dry red wine
1/4 teaspoon kosher salt
1 onion, diced
1 tablespoon olive oil
3 tablespoons oregano
1 clove garlic, minced
1/2 teaspoon ground pepper

Directions:

  1. Cook pasta while preparing other ingredients. Cook until al dente, drain water and set aside.
  2. Pour olive oil into a medium saucepan. Bring to medium-high heat. Add onions and saute for 3 minutes.
  3. Add garlic to pan and sauté for 1 minute.
  4. Add in ground pepper, tomatoes and salt, cook for 2-3 minutes
  5. Pour in wine and cook 5-8 minutes. Stirring occasionally.
  6. Remove from heat, stir in oregano. Serve sauce over cooked pasta.
