Chinese Whole Roast Chicken

Ingredients:

5 lb. Whole Chicken
1/4 cup Soy Sauce
2 tbsp Honey
1 tsp Five Spice Powder
1 Garlic Clove, minced

Directions:

  1. Prehead the oven to 400° F
  2. The Chicken will roast more evenly when trussed. Begin by tucking in the wings into the body and tying them tight to the body of the bird with cooking twine. Then pull the legs together and tie tightly. After trussing the bird, place it into a large sealable bag.
  3. Combine the soy sauce, honey, five spice powder and garlic in a mixing bowl to create the marinade. Pour the marinade into the sealable bagg with the chicken and rub all over, coating the chicken evenly. Remove the chicken from the bag and discard the marinade.
  4. Place the chicken breast side up on a rack over a roasting pan. Let the chicken sit for about 30 minutes at room temperature to dry the skin. This will help the skin crisp when it cooks.
  5. Place the Chicken in the oven and roast for 45-60 minutes, until the chicken reaches an internal temperature of 165° F in the thighs.
