Cinnamon Spiced Apple Hummus

Serves 1 bowl | 
A sweet, spiced dessert-style hummus.

Ingredients:

1 tablespoon coconut oil
2 red apples, peeled, cored, and cut into slices
1 can chickpeas, rinsed and drained, 15 oz.
3 tablespoons light brown sugar
1/4 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1 teaspoon cinnamon
1/2 teaspoon salt
1/4 cup peanut butter
2 tablespoons apple juice

Directions:

  1. Add the coconut oil to a large skillet. Bring to medium heat. Add the apple slices and chickpeas. Cook for 5-7 minutes, stirring regularly, until apples are slightly tender.
  2. Sprinkle the brown sugar, nutmeg, ginger, cinnamon, and salt over the apples and chickpeas. Stir to coat. Cook for about 4 minutes, then remove the skillet from the heat. Let rest.
  3. Pour everything into a blender. Add the peanut butter and apple juice. Pulse until smooth.
  4. Transfer the hummus to a serving bowl. Enjoy!
