Pan-Grilled Salmon with Pineapple Salsa

Ingredients:

1 cup fresh pineapple, chopped
2 tablespoons cilantro, chopped
2 tablespoons red onion, finely chopped
1 tablespoon rice vinegar
1/8 teaspoon red pepper, ground
Cooking spray
4 salmon fillets, 6 oz. each
1/2 teaspoon salt

Directions:

  1. In a bowl, combine pineapple, cilantro, red onion, vinegar and red pepper; set aside.
  2. Heat a nonstick grill pan coated with cooking spray over medium-high heat.
  3. Sprinkle fillets with salt. Cook 4 minutes per side or until fish is fully cooked through and flakes easily when tested with a fork.
  4. Top fillets with salsa and serve.
Course: Dinner
