Creamy Steak & Potato Soup





Serves 4 |
Rich, hearty, and satisfying.
Ingredients:
| 2 tablespoons butter |
| 1 lb. steak, cubed, sirloin or rib-eye |
| 1 yellow onion, chopped |
| 3 cloves garlic, minced |
| 4 cups beef broth |
| 4 gold potatoes, peeled and diced |
| 1/2 teaspoon black pepper |
| 1/2 teaspoon paprika |
| 1 teaspoon salt |
| 1 cup heavy cream |
| 1/2 cup milk |
Directions:
- Heat a large pot to medium-high heat. Add the butter. Once melted, add the steak and cook until evenly browned. Transfer the steak to a plate. Set aside
- In the same pot, add the onions and garlic. Saute for 2-3 minutes, stirring frequently.
- Add the beef broth, potatoes, pepper, paprika, and salt. Bring to a boil, then reduce the heat to low, let simmer for 15-20 minutes, until the potatoes are tender.
- Add the cooked steak back into the pot. Pour in the heavy cream and milk. Stir to combine. Let simmer for 6 minutes.
- Ladle into serving bowls. Enjoy!
