One-Pan Honey BBQ Chicken Rice

Easy to make, easy to enjoy, easy to clean up.

Ingredients:

1 lb boneless, skinless chicken thighs
Sea salt, to taste
Black pepper, to taste
2 tablespoons canola oil
1/2 yellow onion, chopped
2 cloves garlic, minced
1 cup long-grain white rice
2 cups chicken broth
1 cup BBQ sauce, your preference
Honey, for topping

Directions:

  1. Dice chicken thighs into small cubes. Place into a bowl and season with salt and pepper.
  2. Pour the canola oil into a large skillet. Bring to medium-high heat. Sear chicken until golden brown, 5-7 minutes. Remove from the skillet. Set aside.
  3. In the same skillet, saute the onion for 2-3 minutes, then add the garlic, and cook for 1 minute. Then add the uncooked rice and stir together. Cook for 1 minute.
  4. Pour in the chicken broth and stir until combined.
  5. Return the chicken to the skillet. Pour in the BBQ sauce and stir together.
  6. Reduce the heat to low, place a lid on, and let simmer for 20 minutes, until the rice is tender and the liquid is absorbed.
  7. Remove the skillet from the heat. Fluff the rice gently and allow it to sit for 5 minutes before serving.
  8. Transfer the chicken and rice to plates. Drizzle a little honey over the rice and chicken. Enjoy!
