Black Pepper Chicken with Mushrooms

Quick, easy, and remarkably delicious.

Ingredients:

2 boneless, skinless chicken breasts, thinly sliced
Salt, to taste
Black pepper, to taste
1 tablespoon cornstarch
2 tablespoons canola oil
1 green bell pepper, sliced
1 yellow onion, sliced
3 cloves garlic, minced
8 oz sliced button mushrooms
1 teaspoon honey
1 tablespoon soy sauce
1/2 teaspoon rice vinegar
1 tablespoon oyster sauce
2 green onions, chopped, for garnish

Directions:

  1. Place the sliced chicken in a mixing bowl. Season with salt and pepper, then pour the cornstarch over top. Toss until evenly coated.
  2. Pour 1 tablespoon of canola oil into a large skillet. Bring to medium-high heat. Add the chicken and stir-fry for about 5 minutes, until browned. Transfer the chicken to a plate.
  3. Pour the remaining canola oil into the same skillet. Stir-fry the bell pepper and onion for 3 minutes. Then add the garlic and mushrooms, cook for an additional 3 minutes.
  4. Whisk together honey, soy sauce, rice vinegar, and oyster sauce in a small bowl.
  5. Pour the honey sauce over the vegetables. Return the chicken to the skillet. Toss until well-coated. Cook and stir for 2 minutes.
  6. Transfer the chicken and vegetables to serving plates. Garnish with green onions. Enjoy!
