Greek Yogurt Zucchini Bread

The new go-to wholesome quick bread.

Ingredients:

1/2 cup plain Greek yogurt
1 large egg
1/2 cup honey
1/3 cup canola oil
1 1/2 teaspoons vanilla extract
1 1/2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 cup shredded zucchini

Directions:

  1. Preheat the oven to 350° F. Grease a large loaf pan with baking spray.
  2. Stir together the Greek yogurt, egg, honey, canola oil, and vanilla extract in a mixing bowl.
  3. In a separate bowl, stir together the flour, salt, baking soda, baking powder, and cinnamon.
  4. Pour the Greek yogurt mixture into the flour mixture and stir together until just combined.
  5. Pour the batter into the loaf pan. Place the pan into the oven to bake for 40-50 minutes.
  6. Remove from the oven and set on a wire rack to cool completely. Then cut into slices. Enjoy!
