Spiced Pear Muffins





Serves 12 |
An easy to enjoy sweet, seasonal treat.
Ingredients:
| 2 cups flour |
| 2 teaspoons baking powder |
| 1 teaspoon ground cinnamon |
| 1/2 teaspoon salt |
| 1/2 teaspoon baking soda |
| 1/4 teaspoon ground ginger |
| 1/4 teaspoon ground nutmeg |
| 1/8 teaspoon ground cardamom |
| 1/2 cup unsalted butter |
| 3/4 cup brown sugar |
| 2 eggs |
| 1 teaspoon vanilla extract |
| 1/2 cup milk |
| 2 pears, peeled and diced |
Directions:
- Preheat your oven to 375° F. Line a 12-cup muffin tin with baking liners.
- Stir together the flour, baking powder, cinnamon, salt, baking soda, ginger, nutmeg, and cardamom in a mixing bowl. Set aside.
- In a second larger mixing bowl, cream together the butter and brown sugar until light and fluffy. Then beat in the eggs one at a time. Stir in the vanilla extract.
- Slowly pour and stir the flour mixture into the butter mixture, followed by the milk. Mix until just combined. Then fold in the diced pears.
- Divide the batter among the muffin cups, filling each about 2/3 full.
- Place in the oven to bake for 20-25 minutes.
- Remove from the oven. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
