An easy to enjoy sweet, seasonal treat.

Ingredients:

2 cups flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cardamom
1/2 cup unsalted butter
3/4 cup brown sugar
2 eggs
1 teaspoon vanilla extract
1/2 cup milk
2 pears, peeled and diced

Directions:

  1. Preheat your oven to 375° F. Line a 12-cup muffin tin with baking liners.
  2. Stir together the flour, baking powder, cinnamon, salt, baking soda, ginger, nutmeg, and cardamom in a mixing bowl. Set aside.
  3. In a second larger mixing bowl, cream together the butter and brown sugar until light and fluffy. Then beat in the eggs one at a time. Stir in the vanilla extract.
  4. Slowly pour and stir the flour mixture into the butter mixture, followed by the milk. Mix until just combined. Then fold in the diced pears.
  5. Divide the batter among the muffin cups, filling each about 2/3 full.
