Strawberry Yogurt Bites

Minimal ingredients, huge flavor.

Ingredients:

1/2 cup granola
1 cup plain yogurt
1/2 cup strawberries, hulled and chopped
For Topping:
1 strawberry, sliced
1/4 cup granola, broken into small pieces

Directions:

  1. Line a 12-cup muffin pan with muffin liners.
  2. Spoon 2 teaspoons of granola into the bottom of each liner. Set aside.
  3. Pour the yogurt and strawberries into a mixing bowl. Mash the strawberries into yogurt, until mostly smooth and well mixed.
  4. Spoon 2 tablespoons of the strawberry yogurt mixture into each liner. Place a strawberry slice on top of each followed by a teaspoon of granola.
  5. Place the pan into freezer. Let chill for 2-4 hours, until fully set. Enjoy!
