Blueberry and Whipped Ricotta Toast

Serves 4 |
Simple, delicious, and quick to make.
Ingredients:
2 cups blueberries, fresh or frozen |
2 tablespoon honey, more for drizzling |
2 tablespoon fresh lemon juice |
1/4 teaspoon salt |
2 tablespoon extra-virgin olive oil |
4 slices bread |
1 cup whole milk ricotta cheese |
Directions:
- Add the blueberries, honey, lemon juice, and salt to a saucepan. Bring to medium heat. Stir to combine, bringing to a boil. Then reduce heat to medium-low and let simmer until thickened, stirring regularly. Remove from heat and set aside.
- Bring a separate pan to medium-high heat. Once hot, drizzle 1 tablespoon of olive oil in the pan. Place two bread slices in the pan and toast until golden brown, then flip and cook until golden brown. Transfer to a plate and repeat for the other two other slices of bread.
- Place the ricotta into a mixing bowl and whip with a hand mixer until smooth.
- Spread about 2 tablespoons of the whipped ricotta onto each slice of toast. Spoon about 2 tablespoons of the blueberry compote on each slice of toast. Drizzle with honey and enjoy!
