Pineapple and Brown Sugar Glazed Spiral Ham

The perfect amount of sweetness in each slice.

Ingredients:

1 can cola, 12 oz.
1 cup dark brown sugar
1 1/2 tablespoon Dijon mustard
1 1/2 tablespoon coarse mustard
1 tablespoon soy sauce
2 tablespoons apple cider vinegar
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon kosher salt
1 teaspoon ground ginger
1/2 teaspoon onion powder
1 spiral-sliced city ham, around 8 lb.
1 can crushed pineapple, 20 oz.

Directions:

  1. Pour the cola, brown sugar, Dijon and coarse mustards, soy sauce, apple cider vinegar, red pepper flakes, kosher salt, ground ginger and onion powder in a saucepan. Bring to a boil over medium heat, then reduce heat to low. Simmer and stir frequently for 20-30 minutes, until thickened to a syrup consistency. Remove from heat and set aside.
  2. Preheat oven to 325° F.
  3. Use a sharp knife to score the top of the ham. Place ham in a large pan, cover with aluminum foil and bake 1 hour. Remove from the oven and discard the aluminum foil.
  4. Thoroughly brush half the glaze over the ham. Spread the crushed pineapple atop the ham, pressing the pineapple down into the ham. Pour the remaining glaze over the top of the ham. Place back into the oven and bake uncovered for an additional hour. Brushing the ham with the liquids from the bottom of the pan every 15 minutes.
