Cajun-Style Orzo and Kidney Bean Skillet

Serves 4 | 
A wholesome and hearty meal that's exceptionally tasty.

Ingredients:

2 tablespoons olive oil
1 green bell pepper, diced
1 red bell pepper, diced
1 yellow onion, diced
1 jalapeno, diced
3 cloves garlic, diced
1/2 teaspoon ground black pepper
1 teaspoon smoked paprika
1 teaspoon dried oregano
1 tablespoon Cajun seasoning
1 1/2 cups vegetable broth
3 Roma tomatoes, crushed
1 1/4 cup orzo
1 can kidney beans, drained and rinsed, 15 oz.
1 can green chiles, 4 oz.

Directions:

  1. Heat the olive oil in a pan over medium heat. Once hot, add the green and red bell peppers, yellow onion, jalapeno, garlic, black pepper, smoked paprika, oregano and Cajun seasoning. Cook for 5 minutes stirring often.
  2. Add the vegetable broth, crushed tomatoes, orzo, kidney beans and green chilies to the pan, stir to combine. Bring to a boil, cover with a lid, set to low heat and simmer for 20 minutes.
  3. Transfer to serving plates and enjoy!
