Sweet and Spicy Honey Sriracha Salmon Bowls

Quick and easy to make with big flavors.

Ingredients:

4 salmon fillets, 4-6 oz. each
3 tablespoons water
2 tablespoons honey
2 tablespoons Sriracha sauce
2 teaspoons minced garlic
3 tablespoons Tamari sauce
1 tablespoon olive oil
2 cups white rice, cooked
1 cup edamame, cooked
1 cucumber, sliced
1 avocado, sliced
1/2 cup Sriracha mayo

Directions:

  1. Cut salmon fillets into 1-inch cubes. Set aside.
  2. Combine the water, honey, Sriracha sauce, minced garlic and tamari sauce in a large mixing bowl. Whisk together until well combined.
  3. Place the salmon into the mixing bowl. Cover and place the bowl into the refrigerator. Allow the salmon to marinate for 1 hour.
  4. Pour olive oil into a large pan and swirl around to coat. Bring to medium heat.
  5. Remove the salmon from the marinade. Place salmon into the pan and cook for 2-3 minutes on each side, until lightly crisp. Remove from heat.
  6. Place an even amount of cooked rice into each serving bowl. Add crispy salmon and top with edamame, cucumber slices and avocado slices. Swirl Sriracha mayo over top and enjoy!
