Honey Lime Chopped Salad

Serves 6 | 
Fresh and crisp with a sweet-tart finish.

Ingredients:

1/4 cup lime juice
1/4 cup rice wine vinegar
2 tablespoons honey
3/4 cup olive oil
1 clove garlic, chopped
Salt, to taste
Cracked black pepper, to taste
6 cups chopped Napa cabbage
2 green onions, sliced
1/2 cup chopped sweet cherry peppers
1/4 cup chopped cilantro

Directions:

  1. Pour lime juice, rice wine vinegar, honey, olive oil and garlic into a blender. Season with salt and pepper. Pulse until smooth. Set aside.
  2. Combine chopped Napa cabbage, sliced green onions, chopped sweet cherry peppers and cilantro in mixing bowl.
  3. Pour dressing over top and toss until well coated.
  4. Use salad tongs to transfer salad to serving plates and enjoy!
