Basil Pesto Meatloaf





Serves 6 |
Simple ingredients create a sophisticated meal.
Ingredients:
4 slices bread, crusts removed |
1/3 cup prepared basil pesto sauce |
2 eggs, lightly beaten |
1 1/2 lb ground beef |
1 teaspoon salt |
1/2 teaspoon ground black pepper |
Directions:
- Place crustless bread into a food processor and pulse until fine breadcrumbs form. Set aside.
- Heat oven to 350° F.
- Pour breadcrumbs into a mixing bowl. Add basil pesto sauce, eggs, ground beef, salt and pepper to the breadcrumbs. Mix together thoroughly.
- Spoon into a small loaf pan and press into the edges. Place loaf pan in the oven and bake for 75 minutes.
- Remove from oven and let stand 10 minutes before serving.
- Cut into 6 slices and enjoy!
