Classic Chicken Gyro with Tzatziki Sauce

A delectable Greek staple.

Ingredients:

1 lb boneless skinless chicken breasts
Olive oil, for drizzling
2 cloves garlic, minced
1 tablespoon paprika
1 teaspoon dried oregano
4 pitas
1 tomato, chopped
1/2 red onion, chopped
Crumbled Feta, for topping
For Tzatziki Sauce
2 tablespoons olive oil
1 clove garlic, minced
8 oz plain Greek yogurt
1 teaspoon red wine vinegar
1 1/2 tablespoons fresh dill
2 tablespoons cucumber, grated

Directions:

  1. Preheat oven to 375° F.
  2. Place the chicken in a small baking dish. Drizzle olive oil over top and coat well. Sprinkle minced garlic, paprika and oregano over the chicken and coat well.
  3. Place the baking dish in the oven to cook for about 30 minutes.
  4. Add a few drops of olive oil to a skillet, swirl around and bring to medium heat. Place a pita into the skillet to cook for 2 minutes, then flip and cook for an additional 2 minutes. Set cooked pita aside. Repeat with wit remaining pitas.
  5. To make the Tzatziki sauce, combine the olive oil, garlic, Greek yogurt, red wine vinegar, dill and cucumber in a mixing bowl. Stir together until well combined. Set aside.
  6. Remove the chicken from the oven and slice into strips.
  7. Place equal amounts of chopped tomato, chopped red onion, chicken and Tzatziki sauce in the middle of each pita. Fold pitas in half top with crumbled feta and enjoy!
