Easy Chicken Tortilla Soup

Serves 4 |
Hearty and oh so delicious!
|4 cups chicken stock|
|1 can tomatoes with juice, (diced)|
|2 tablespoons lime juice|
|1 can green chiles, (un-drained)|
|2 tablespoons cilantro leaves, (chopped)|
|1 carrot, (rinsed, dried and diced)|
|2 green onions, (rinsed, dried and chopped - green parts only)|
|3/4 cup corn kernels, (drained)|
|1 cup chicken, (cooked,chopped)|
|1/2 cup Monterey Jack cheese, (shredded)|
|Tortilla chips, (for serving)|
- In a large stockpot, simmer chicken stock with tomatoes, lime juice, green chiles, cilantro, carrot, green onions and corn for 45 minutes.
- Add cooked chicken about 5 minutes before done.
- Serve soup in bowls topped with shredded cheese and crushed tortilla chips.
