Mixed Green Salad with Lemon Vinaigrette

Serves 6 |
A healthy and full flavored salad.
Ingredients:
1 head red leaf lettuce |
1/2 head romaine lettuce |
1 cup baby spinach |
6 tablespoons walnut oil |
2 teaspoons white wine vinegar |
2 tablespoons fresh lemon juice |
1 green onion, minced |
1/4 teaspoon sugar |
Salt, to taste |
Ground black pepper, to taste |
Directions:
- Wash all lettuce thoroughly and dry well. Tear into medium to large-sized pieces. In a large serving bowl, combine oil, vinegar, lemon juice, green onion, sugar, and salt and pepper. Whisk until emulsified. Adjust the seasonings as desired.
- Toss the lettuce with the vinaigrette and serve.
