Cranberry-Sausage Cocktail Meatballs

Serves 4 dozen | 
A fun and flavorful side dish.

Ingredients:

1 lb. ground beef
1 lb. hot Italian sausage, casings removed
1 cup corn flakes, crumbs or panko
2 eggs
1/4 cup parsley, chopped
1/3 cup ketchup
1/4 cup onions, minced
2 tablespoons soy sauce
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1 can whole cranberry sauce, 16 oz.
12 ounces chili sauce
1 tablespoon packed brown sugar
2 teaspoons lemon juice

Directions:

  1. In a large bowl, combine the sausage and beef, corn flake crumbs or panko, parsley, eggs, ketchup, onion, soy sauce, garlic powder and pepper. Blend the ingredients well and form into small balls, about 3/4- inch in diameter.
  2. Bake in a 325° F oven until cooked through, about 10- 12 minutes. 
  3. Combine the cranberry sauce, chili sauce, brown sugar, and lemon juice in a saucepan. Cook, stirring, over medium heat until the mixture is blended.
  4. Combine the meatballs and the sauce and place back in the oven or in a tabletop cooker or crockpot and let them simmer together, uncovered until the sauce thickens into a glaze.
