Oatmeal Apple Breakfast Cake

It’s almost like eating dessert for breakfast.
Ingredients:
1 cup oats |
1 red apple, peeled and chopped |
2 eggs |
3 tablespoons plain yogurt |
3 tablespoons honey |
1 teaspoon vanilla extract |
1 tablespoon coconut oil |
1/2 teaspoon baking powder |
1/2 teaspoon baking soda |
1 teaspoon cinnamon |
Directions:
- Preheat the oven to 350° F. Line a medium baking pan with parchment paper.
- Add the oats, chopped apple, eggs, yogurt, honey, vanilla extract, coconut oil, baking powder, baking soda, and cinnamon in a food processor. Pulse until well blended and smooth.
- Pour the oat mixture into the baking pan.
- Place into the oven and bake for 20-30 minutes. Until top is light brown.
- Remove from the oven and let cool. Once cool enough to handle, cut into 8 slices and transfer the slices to an airtight container. Place the lid on the container and place in the fridge to chill for 2 hours.
