The Final Week of Grilled Cheese Month
We’re sharing one of the tastiest grilled cheese sandwiches featuring an exceptional aged cheese as the centerpiece. Beecher’s Flagship Cheese is a semi-hard cow’s milk cheese that boasts a uniquely robust, nutty flavor. Each wheel is carefully aged for 15 months to ensure the cheese’s complex flavor and ever-so-slight crumble have fully developed. Beecher’s Grilled Flagship, Tomato and Basil Sandwich

Ingredients
- 1/4 cup all-natural mayonnaise
- 1 1/2 tablespoons whole-grain mustard
- 2 dashes Tabasco or other hot sauce
- 8 slices hearty artisanal white bread
- 4 oz. Beecher’s Flagship cheese
- 2 Roma tomatoes, cut into 1/4-inch thick slices
- 12 fresh basil leaves
- 2 oz. Havarti cheese, cut into 8 thin slices
Directions
In a small bowl, whisk together the mayonnaise, mustard, and Tabasco until fully combined.
Spread half of the mayonnaise mixture across four slices of bread. Layer 2 slices of Flagship cheese, 2 slices of tomato, 3 basil leaves, and 2 slices of Havarti cheese on each slice of bread with the mayonnaise mixture.
Spread the remaining mayonnaise mixture on the other four slices of bread. Place these mayo side down on top of the bread slices with the cheese to complete the sandwich.
Bring a large pan to medium heat. Place the sandwiches in the pan. Cook until the cheese has melted and the bread has become golden then flip and cook, about 3 minutes per side.
Remove the sandwiches from the pan and place on serving plates. Serve warm with tomato soup.
