Celebrate the Earth this Friday

Did you know that the first Earth Day was 52 years ago on April 22nd, 1970? The day the Earth took center stage, and 20 million people took to their streets to rally for change. A call to action for clean air, water and soil, for humanity come together to protect the planet. With Earth Day falling on Friday this year, we would love to show our appreciation for the hard-working people that have answered that call and make that change a reality. Lakeside Organic Gardens, the largest family-owned and operated, solely organic vegetable grower in the United States uses state of the art organic farming practices that help enrich the soil, reduce food waste, conserve water and overall improve the local ecosystem. This is done by caring for the soil, rotating crops, composting techniques, and most importantly relying on biological controls for disease and pests over synthetic chemicals. These sustainable organic farming practices ensure irrigation is more precise, and essential minerals and microorganisms are put back into the soil. By planting beneficial flowers near the crops, helpful insects are attracted to the area and act as a natural pest control, in turn promoting a more biodiverse ecosystem. mt tam and truffle grilled cheese04/11/2022

We are very happy to announce that Cowgirl Creamery Mt. Tam Triple Cream is this week’s featured cheese for Grilled Cheese Month.

Mt. Tam is similar in texture to a brie with a creamy, salted butter flavor, a hint of white mushroom and herbaceous notes.

Mt. Tam and Truffle Grilled Cheese

An elevated grilled cheese that’s pure deliciousness.

Ingredients

  • 4 oz. Fromage Blanc, or Foggy Morning
  • 1/2 cup sliced brown button mushrooms
  • 1 tablespoon unsalted butter, more for buttering bread
  • 1 teaspoon truffle mousse pâté
  • 1 teaspoon dried thyme
  • 2 slices Mt. Tam, about 2 oz. or 1/4 wheel
  • 2 oz. Gruyère, shredded
  • 4 slices sourdough bread
  • Salt, to taste
  • Ground black pepper, to taste

Directions

Bring a sauté pan to medium heat. Add butter to the pan and let melt. Add brown button mushrooms to the pan, season with salt and pepper, and cook for 3-5 minutes. Remove pan from the heat. Pour cooked mushrooms into a mixing bowl. Add truffle pâté, thyme and Fromage Blanc, mix together and season with salt and pepper, if desired.

 

Bring a large pan to medium-low heat. Butter one side of each slice of bread. Spread the Fromage Blanc mixture onto the unbuttered side of two of the slices. Top with one slice of Mt. Tam and half of the shredded Gruyère. Place the other two slices of bread, butter side up on top of the cheeses. Place the sandwiches into the hot pan. Cook for about 5 minutes per side, until cheese is melted, and the bread is golden brown. Transfer grilled cheese sandwiches to serving plates, cut in half and enjoy!

 

Servings 2 sandwiches

Grilled Cheese Month continues with a most delectable sandwich using Cabot Black Wax Vintage Cheddar as the centerpiece.

This Vermont-style cheddar is hand-selected and aged for a minimum of 16 months, ensuring the cheese has a buttery-smooth texture a flavor profile that is both sharp and savory.

Cabot Vermont Cheddar Grilled Cheese Sandwich

Ingredients

  • 1 tablespoon salted butter
  • 4 slices whole wheat bread
  • 4 oz. Cabot Vintage Cheddar, sliced
  • 6 slices applewood smoked bacon, cooked until crispy
  • 2 teaspoons maple syrup

Directions

Place butter in a large skillet and melt over medium-low heat.

 

Arrange half of the cheese and bacon on two slices of bread. Drizzle maple syrup over the top and place the other two slices on top.

 

Place both sandwiches into the skillet and cook until bread is golden brown. Then flip and cook until other side is golden brown, and the cheese is melted.

 

Servings 2 sandwiches

The Masters Golf Tournament begins this Thursday and ends Sunday, April 7th – 10th.
