Grilled Cheese Month Continues
We are excited to extend the deliciously cheesy and melty foodie celebration of grilled cheese sandwiches with a new featured cheese, Bergamino di Bufala mozzarella. Made in Lombardy, Bergamino di Bufala mozzarella is a pudgy Taleggio-like square with a thin, tender bloomy rind. The delicate aroma of mushrooms is accompanied by a soft, supple texture and a pronounced milky flavor. Enjoy this unique cheese in our latest recipe creation.
Caprese Grilled Cheese Sandwich
A gourmet Italian-style grilled cheese with big flavors.
Ingredients
- 8 slices fresh sourdough bread
- 12 oz. fresh Bergamino di Bufala mozzarella, sliced into rounds
- 16-24 Roma tomato slices
- 4 tablespoons chopped fresh basil
- Freshly ground black pepper, to taste
- 8 teaspoons extra-virgin olive oil, or 4 tablespoons butter
- 2 cloves garlic, for rubbing bread
Directions
Layer the mozzarella rounds in an even layer over one slice of bread follow by an even layer of sliced tomatoes. Sprinkle the basil over top and season with ground black pepper. Place a second slice of bread on top. Repeat this process with the remaining slices of bread and ingredients.
For each sandwich, drizzle 1 teaspoon of olive oil into a non-stick skillet. Bring to medium-low heat, tilting the oil back and forth inside the skillet.
Once the oil is hot, add the sandwich to the skillet. Cover with a lid and cook for about 2 minutes, until golden brown. Then lift the sandwich out and drizzle 1 tablespoon of olive oil into the skillet. Swirl around to coat. Flip the sandwich to the uncooked side and return to the skillet. Cover and cook until golden brown and cheese is melted through. (If using butter, spread 1/2 tablespoon of butter across the top of the sandwich and 1/2 tablespoon across bottom of the sandwich. Place the sandwich into the skillet. Cover and cook over medium heat until golden brown then flip and cook until other side is golden brown, and the cheese is melted through.)
Remove the sandwich from the skillet. Brush both sides of the sandwich with a garlic clove. Serve immediately.
