30 Days of Grilled Cheese

April has the honor of playing host to one of the tastiest foodie celebrations of the year, Grilled Cheese Month. In the coming weeks, we will be highlighting several delectable cheeses that help create some of the yummiest homemade grilled cheese sandwiches. To kick off Grilled Cheese Month, we’d love to share with you Humboldt Fog. It’s a soft-ripened goat cheese with a distinctive ribbon of edible vegetable ash. Each wheel is handcrafted in Humboldt County California by expert cheesemakers. Humboldt Fog has prominent flavors of buttermilk and fresh cream are complimented by notes of floral and herbs, with a clean citrus finish. As the cheese matures, a cream-line develops, and the flavors intensify. Try our recipe below using Humboldt Fog and keep an eye out for more grilled cheese recipes in the coming weeks.

Humboldt Fog Grilled Cheese Sandwich

Cheesy, crispy and mouthwateringly good!

Ingredients

  • 1/4 – 1/2 cup Humboldt Fog goat cheese
  • 2 slices cinnamon raisin bread
  • 3 slices prosciutto
  • 1 tablespoon butter

Directions

Spread the Humboldt Fog goat cheese between the two slices of cinnamon raisin bread. Place the prosciutto on one piece of bread and sandwich the slices together.

Preheat a small nonstick skillet over medium-high heat. Melt the butter in the skillet.

Add the sandwich to the skillet and cook on one side until the bread is golden brown, about two minutes. Flip and cook for another two minutes, or until the bread is golden brown. Cut in half and serve immediately.
