This February 1st marks both The Lunar New Year and The Year of the Tiger.

To celebrate this momentous event, we would like to share an all-time favorite recipe of ours, Beef Stir-fry. It’s filled with delicious beef and garden-fresh veggies, and it strikes the ideal balance of savory and sweet with every bite. We love Lakeside Organic Gardens fresh baby bok choy and green onions in this homemade stir-dry. Beef Stir-Fry

Ingredients

  • 2 lb. boneless beef top round steak, sliced into strips
  • 3 tablespoons cornstarch
  • 2 tablespoons sugar
  • 1/2 cup soy sauce
  • 1 can condensed beef broth, 10.5 oz.
  • 2 tablespoons vegetable oil
  • 2 medium red bell peppers, cut lengthwise
  • 3 stalks celery, sliced
  • 2 medium Lakeside Organic green onions, cut lengthwise
  • 1 Lakeside Organic baby bok choy, sliced thin
  • 4 cups sliced mushrooms
  • Cook long-grain white rice, for serving

Directions

Whisk together cornstarch, sugar, soy sauce and beef broth in a small bowl. Set aside.

 

Pour 1 tablespoon of vegetable oil into a wok or skillet, bring to high heat. Once hot, add half of the beef and cook until evenly browned. Remove cooked beef from the wok or skillet and repeat with remaining beef until browned. Transfer to the plate and cover.

 

Add the remaining vegetable oil to the wok or skillet and reduce heat to medium. Add half of the red bell peppers, celery, green onions, bok choy and mushrooms. Cook and stir until vegetables are crisp-tender. Transfer to a plate and repeat with remaining vegetables. Transfer cooked vegetables to the plate and cover.

 

Pour the cornstarch mixture into the wok or skillet. Remain on medium heat and cook until the mixture has thickened and is boiling. Add the beef and vegetables back into the wok or skillet and cook until beef and vegetables are heated through.

 

Add cooked rice into 8 serving bowls. Spoon beef stir-fry over the rice and enjoy!
