Guinness Macaroni and Cheese

The tastiest St. Patrick's Day side dish.

Ingredients:

1 lb elbow macaroni
4 tablespoons butter
4 tablespoons flour
1 cup Guinness beer
1/2 cup Half & Half
1 1/2 cups 2% milk
1 tablespoon Dijon mustard
1 teaspoon salt
1/2 teaspoon ground black pepper
2 oz cream cheese, cubed
3 1/2 cups shredded cheddar cheese

Directions:

  1. Fill a large pot with water and bring to a boil. Cook the macaroni according to package instructions. Drain and set aside.
  2. In a large pot melt the butter over medium heat. Once melted, add flour and whisk until incorporated. Whisk in the Guinness, half and half, milk, Dijon mustard, salt and pepper. Bring to a simmer and cook for about 5 minutes, stirring occasionally.
  3. Sprinkle the shredded cheddar and cream cheese over top. Stir until smooth.
  4. Pour the macaroni into the sauce and stir. Reduce heat to low and cook for about 5 minutes.
  5. Spoon macaroni and cheese into four serving bowls and enjoy!
