Chocolate Dipped Orange Cookies

Chocolate and citrus in one dessert!

Ingredients:

3/4 cup flour
2 tablespoons cornstarch
1/8 teaspoon double-acting baking powder
1 stick unsalted butter
1/3 cup confectioner sugar
1 egg, separated
2 tablespoons freshly grated orange zest
1 tablespoon fresh orange juice
1/4 teaspoon vanilla
1 1/2 cups semisweet chocolate morsels, melted

Directions:

  1. Preheat oven to 350° F. Grease two baking sheets with cooking spray.
  2. In a large bowl, sift together the flour, cornstarch, and baking powder.
  3. In a separate bowl, use an electric mixer to cream together the butter and the confectioners sugar until the mixture is light and fluffy. Then beat in the egg yolk, orange zest, orange juice, and vanilla extract. Pour into the flour mixture and stir together well.
  4. In a third bowl, beat the egg white until it forms soft peaks and then fold it gently into the batter.
  5. Use a spoon to scoop up batter and arrange on the baking sheets. Place in the oven and bake for 10 to 12 minutes, or until the edges are golden.
  6. Transfer the cookies to wire racks to cool. Tear off a long strip of wax paper and flatten out on the countertop. Dip each cookie into the melted chocolate and place on the wax paper to let the chocolate set.
