Spicy Chicken and Tangerine Kabobs

Serves 4 | 
Sweet, spicy and savory in all the right ways.

Ingredients:

2 lb boneless skinless chicken breast, cut into cubes
2 red bell peppers, chopped
4 tangerines, peeled and segmented
1 onion, chopped
4 tablespoons Cajun seasoning
4 metal skewers
1 tablespoon thinly sliced green onion

Directions:

  1. Prepare grill for medium heat.
  2. While grill is heating, thread chicken, bell pepper, tangerine segment, and onion onto each skewer. Repeat until all ingredients are gone. Sprinkle skewers with Cajun seasoning.
  3. Place kabobs on grill rack and cook for about 10 minutes, turning kabobs occasionally while grilling.
  4. Garnish with green onions and enjoy!
