Fancy French Onion Soup

Serves 4 | 
A delicious twist on the classic.

Ingredients:

3 tablespoons butter
4 Vidalia onions, thinly sliced
1 tablespoon flour
1/2 teaspoon salt
2 cups vegetable broth
1/2 cup heavy whipping cream
1 cup milk
3 egg yolks, beaten
1 1/2 teaspoons paprika
1/8 tablespoon hot pepper sauce
Ground black pepper, to taste

Directions:

  1. In a saucepan, the melt butter over medium heat. Once butter is melted, add onions and saute for about 10 minutes, until golden brown.
  2. Stir in flour and salt, mix together. Pour in small amounts of broth, stirring constantly, until all the broth is used. Reduce heat to low, cover, and simmer for 10 minutes.
  3. When onions are very tender, stir in heavy whipping cream and milk. Simmer until heated thoroughly. Remove 1/2 cup of the soup and mix in the egg yolks, stir together.
  4. Slowly stir egg yolk mixture back into soup. Heat through, but do not allow soup to boil. Stir in paprika, hot pepper sauce and black pepper. Serve hot.
