Extra Crispy Baked Fish Sticks

Serves 8 | 
Homemade and absolutely delicious.

Ingredients:

1/4 cup flour
1/4 teaspoon cayenne pepper
1 1/2 lb boneless cod, cut into strips
2 eggs
1 teaspoon kosher salt
2 tablespoons vegetable oil
1 1/2 cups panko crumbs
Lemon wedges, for garnish
Tartar sauce, for dipping, optional

Directions:

  1. Preheat oven to 450° F. Grease a baking sheet with vegetable oil.
  2. Mix together panko crumbs, kosher salt and cayenne pepper. Pour flour in a separate bowl. In a third bowl, beat eggs.
  3. Drudge fish in flour, then dip floured fish in eggs and then drudge fish in panko crumb mix. Transfer fish to greased baking sheet. (Repeat with remaining fish)
  4. Place baking sheet in oven and bake for 6 minutes. Remove fish from oven, flip and place back in oven for an additional 6 minutes.
  5. Serve fish with lemon wedges and tartar sauce.
