Honey Sriracha Chicken Stir-fry

Serves 4 | 
A perfect union of sweet and spicy.

Ingredients:

1 1/4 tablespoons avocado oil
1/2 cup chopped cashews
1/4 cup chicken broth
1 lb boneless, skinless chicken breasts, cubed
1/4 cup honey
1 teaspoon grated ginger root
1 1/4 teaspoons salt
1/4 cup honey
1 tablespoon finely chopped garlic
2 teaspoons corn starch
1 tablespoon Sriracha sauce
3 tablespoons chopped cilantro
2 tablespoons dry sherry
6 cups chopped cabbage
1 tablespoon white vinegar

Directions:

  1. Combine honey, salt, sriracha sauce, sherry and white vinegar in a mixing bowl.
  2. Pour 1 tablespoon of avocado oil in a large skillet. Bring to high heat.
  3. Place chicken in skillet and cook 2-4 minutes per side. (Until browned)
  4. Add remaining avocado oil to skillet. Toss in ginger root and garlic. Stir fry for 30 seconds. Add cabbage to skillet and pour sauce over top. Cook for 2-3 minutes.
  5. In a separate mixing bowl combine cornstarch and chicken broth. Stir together.
  6. Pour over cabbage in skillet. Add chicken to skillet. Stir together and cook for 2-3 minutes.
  7. Remove skillet from heat. Stir in cashews and cilantro.
