Easy Fresh Spinach Dip

Ingredients:

2 packages fresh baby spinach
1 tablespoon butter
2 cloves garlic, minced
1 package cream cheese
1 can artichoke hearts, drained and chopped
1/2 cup sour cream
1/2 cup shredded Mozzarella cheese
Baked pita chips, for serving
Fresh pita wedges, for serving

Directions:

  1. Preheat oven to 350° F.
  2. Put spinach in a large, microwave-safe bowl then microwave until wilted, about 3 minutes. Drain, pressing spinach between paper towels, then chop. Reserve for later.
  3. In a nonstick skillet set over medium-high heat, melt butter. Add garlic and cream cheese. Cook until cream cheese melts, stirring constantly for 3 to 4 minutes.
  4. Fold in artichokes, sour cream, 1/4 cup mozzarella cheese and reserved spinach; stir until cheese melts.
  5. Transfer spinach mixture to a 1-quart shallow baking dish then sprinkle with remaining 1/4 cup mozzarella cheese.
  6. Bake until bubbly and hot, about 15 minutes. Serve immediately with baked pita chips or fresh pita wedges.
