Loaded Jalapeno Corn Fritter

Serves 2 |
Everything you love about jalapeno poppers and corn fritters in one dish.
|2 jalapeno peppers, (diced)|
|2 tablespoons chopped cilantro|
|1/2 cup corn flour, (more may be needed to help hold patties together)|
|2 slices bacon, (cooked and crumbled)|
|2 cups corn kernels|
|1/2 cup grated Cheddar cheese|
|2 green onions, (sliced)|
|2 tablespoons cooking oil|
|1 teaspoon ground coriander|
|1/4 cup cream cheese|
|1 lime, (zest and juice only)|
|1 teaspoon smoked paprika|
- Pour cooking oil in saute pan. Turn to medium heat.
- Combine jalapeno peppers, cilantro, corn flour, bacon, corn kernels, Cheddar cheese, green onions, coriander, cream cheese, egg, lime juice and zest and paprika in a mixing bowl. Mix together very well.
- Form into two patties with hands.
- Once pan is hot, place patties in and cook 2-4 minutes per side. (Should be golden brown)
