Slightly Spicy Wild Rice Soup

Serves 4 | 
Rich, hearty and fun to make.

Ingredients:

2 cups wild rice, (cooked)
1/8 teaspoon ground cayenne pepper
1 teaspoon chili powder
2 cups corn kernels
1/2 cup green chile peppers
1/2 teaspoon dried oregano
1/3 cup onion, (diced)
3 cans vegetable broth, 14 oz. each
1 tablespoon cilantro, (chopped)
1/3 cup carrots, (diced)
1 teaspoon ground cumin

Directions:

  1. Bring a large saucepan to medium heat. Once hot, add corn kernels, onion, 1 can of broth and carrots. Reduce heat and let ingredients simmer for 10-15 minutes.
  2. Pour in remaining broth to sauce pan. Add wild rice, cayenne pepper, chili powder, oregano and cumin. Stir together and simmer for 5 minutes.
  3. Spoon soup into serving bowls and top with cilantro.
Course: Soup
