Pan Seared Corn and Cotija Guacamole

Serves 1 bowl | 
A delicious twist on traditional guacamole.

Ingredients:

1/4 cup onion, (finely diced)
2 avocados, (mashed)
Salt, (to taste)
2 tablespoons lime juice
1 tablespoon butter
Ground black pepper, (to taste)
1/4 cup Cotija cheese, (crumbled)
1 tablespoon cilantro
1 cup corn

Directions:

  1. Place butter in a skillet, heat to medium-high. Once butter is melted, add corn, toss once and let sit. Cook for 6-10 minutes, until corn is charred. Stir corn well and cook an additional 6-10 minutes.
  2. As corn is cooking, combine onion, avocado, salt, lime juice, pepper, Cotija cheese and cilantro in a mixing bowl.
  3. Add corn to mixing bowl, stir together and serve.
