The Absolute Best Pork Spare Ribs





Serves 6 |
Bringing together dry rub with barbecue sauce to create a flavor explosion.
Ingredients:
| 1 rack pork spare ribs |
| For dry rub |
| 1 teaspoon garlic powder |
| 2 tablespoons brown sugar |
| 1/2 teaspoon sea salt, (finely ground) |
| 4 tablespoons dark roast coffee |
| 1/2 teaspoon coriander powder |
| 1 teaspoon ground black pepper |
| 1 teaspoon cayenne pepper |
| 1 teaspoon onion powder |
| Cooking oil |
| For sauce |
| 1 tablespoon ground cayenne pepper |
| 3 tablespoons Dijon mustard |
| 2 tablespoons fresh lime juice |
| 1 tablespoon orange juice |
| 3 tablespoons tomato paste |
| 1 habanero pepper, finely diced |
| 2 tablespoons maple syrup |
| 1 cup dark rum |
| 1 tablespoon chili paste |
Directions:
- Mix together all dry rub ingredients together very well, except cooking oil. Add cooking oil slowly. Add enough cooking oil to make a thick paste.
- Pat dry ribs before applying dry rub. Coat spare ribs with dry rub evenly.
- Preheat oven to 225 degrees F.
- Place spare ribs on a wire rack in the oven. Roast for 4-5 hours.
- As spare ribs are roasting, mix together all the sauce ingredients. Brush sauce over spare ribs and then place spare ribs back in the oven and broil for 4-6 minutes.
