Leftover Turkey Soup

Serves 10 |
Make after Thanksgiving just as delicious!
Ingredients:
1 tablespoon poultry seasoning |
Turkey leftovers, meat, bones, carcass |
Garlic salt, to taste |
16 oz green peas |
2 carrots, peeled, sliced |
Ground black pepper, to taste |
2 celery stalks, chopped |
2 cups white rice, uncooked |
1 1/2 cups stuffing |
2 1/2 quarts bone broth |
1 onion, peeled, diced |
Directions:
- Place carrots, poultry seasoning, turkey leftovers, broth, onion, and stuffing in a large pot. (Add water if needed) Bring contents to a boil on medium-high heat. Reduce heat and simmer for 1 hours. Remove turkey carcass and bones. Place any meat back in pot.
- Add pepper and garlic salt, to taste. Pour in white rice and turn heat up. Bring pot to a boil. After boiling, reduce to simmer and cook for 15 minutes.
- Stir in peas, continue to simmer for 10 minutes. Add more salt and pepper if needed.
