Marinated Shrimp

Serves 6 to 8 | 

Ingredients:

1/4 cup fresh mint
1 tablespoon ginger, grated
1 tablespoon grapefruit juice
1 tablespoon grapefruit zest
3 tablespoons extra virgin olive oil
1/2 teaspoon kosher salt
1 lb medium shrimp, cooked

Directions:

  1. Chop mint then place in a medium size bowl.
  2. Add ginger, grapefruit juice, grapefruit zest, olive oil and salt; stir to combine.
  3. Add shrimp; stir to combine.
  4. Place in refrigerator and marinate for 10 minutes before serving.
Course: Dinner
