Sheet Pan Steak Quesadillas

Ingredients:

2 tbsp TABASCO Original Red Sauce
1 lb Flank Steak
1 Red Bell Pepper, sliced
1 Green Bell Pepper, sliced
1 Yellow Bell Pepper, sliced
1/2 Large Red Onion, cut into 8 large chunks
1 tbsp Olive Oil
2 tbsp Freshly Squeezed Orange Juice
1/4 cup Soy Sauce
1 tsp Paprika
1 tsp Cumin
1 tsp Onion Powder
1 tsp Garlic Powder
1/2 tsp Salt, more or less to taste
12 Soft Taco Flour Tortillas
6 cup Shredded Mexican Cheese Blend
Optional Toppings, Guacamole, Sour Cream or Crema, Pico de Gallo or Salsa, Cotija Cheese

Directions:

  1.  Place steak into a large bowl or gallon sized ziploc bag.
  2. Place peppers and onion into another large bowl or bag.
  3. In a medium sized bowl, whisk together TABASCO® Sauce, olive oil, orange juice, lime juice, soy sauce, paprika, cumin, onion powder, garlic powder, and salt.
  4. Pour half of the sauce over the steak and half over the peppers and onion.
  5. Cover or seal and place in fridge to marinate for 8 hours.
  6. Preheat oven to 450 degrees F and line a rimmed baking sheet with a silicone baking mat or parchment paper.
  7. Place steak onto prepared baking sheet and bake for 15 minutes.
  8. Remove from oven, add peppers and onions, and cook for an additional 15 minutes.
  9. Let steak rest for 10 minutes, before thinly slicing.
  10. Heat a large nonstick pan over medium heat.
  11. Place one tortilla onto a clean work surface.
  12. Top with 1/2 cup shredded cheese.
  13. Top with 1/6th of the thinly sliced steak, peppers, and onions mixture.
  14. Top with 1/2 cup more shredded cheese and then another flour tortilla.
  15. Cook in preheated pan, flipping halfway through, until the tortillas are golden brown and the cheese has melted.
  16. Repeat with remaining quesadillas.
  17. Cut and serve with optional toppings!
