Coffee Cake Muffins





Serves 12 |
Perfect with morning coffee.
Ingredients:
2 cups flour |
1 cup sugar |
1/2 teaspoon teaspoon salt |
1 tablespoon baking powder |
1 teaspoon ground cinnamon |
1 stick unsalted butter, melted |
1/2 teaspoon vanilla extract |
1/2 cup whole milk |
2 large eggs |
For the Streusel Topping: |
1/2 cup flour |
1 teaspoon ground cinnamon |
1/2 cup packed brown sugar |
1/4 cup cold unsalted butter, chopped |
Directions:
- Preheat your oven to 375°F. Line a muffin tin with paper liners.
- In a large mixing bowl, combine the flour, sugar, salt, baking powder, and cinnamon.
- In a separate bowl, whisk together the melted butter, vanilla extract, milk, and eggs.
- Pour the butter mixture into the flour mixture. Stir until just combined. Set aside.
- In a small bowl, combine the flour, cinnamon, and brown sugar. Then add the cold butter pieces. Mix until the mixture resembles coarse crumbs.
- Spoon the muffin batter into the muffin tin. Fill each cup about 2/3 full. Then sprinkle the streusel topping over top.
- Place the muffin tin into the oven. Bake for 18-22 minutes.
- Remove from the oven. Let the muffins cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
