Coffee Cake Muffins

Perfect with morning coffee.

Ingredients:

2 cups flour
1 cup sugar
1/2 teaspoon teaspoon salt
1 tablespoon baking powder
1 teaspoon ground cinnamon
1 stick unsalted butter, melted
1/2 teaspoon vanilla extract
1/2 cup whole milk
2 large eggs
For the Streusel Topping:
1/2 cup flour
1 teaspoon ground cinnamon
1/2 cup packed brown sugar
1/4 cup cold unsalted butter, chopped

Directions:

  1. Preheat your oven to 375°F. Line a muffin tin with paper liners.
  2. In a large mixing bowl, combine the flour, sugar, salt, baking powder, and cinnamon.
  3. In a separate bowl, whisk together the melted butter, vanilla extract, milk, and eggs.
  4. Pour the butter mixture into the flour mixture. Stir until just combined. Set aside.
  5. In a small bowl, combine the flour, cinnamon, and brown sugar. Then add the cold butter pieces. Mix until the mixture resembles coarse crumbs.
  6. Spoon the muffin batter into the muffin tin. Fill each cup about 2/3 full. Then sprinkle the streusel topping over top.
  7. Place the muffin tin into the oven. Bake for 18-22 minutes.
  8. Remove from the oven. Let the muffins cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
