Pumpkin Donuts with Maple Glaze





Serves 12 mini donuts |
Like tasting Autumn in every bite.
Ingredients:
For the Donuts: |
3/4 cup flour |
1/4 cup oat flour |
1/2 teaspoon salt |
1/4 teaspoon baking soda |
3/4 teaspoon baking powder |
1/2 teaspoon ground cinnamon |
1/2 teaspoon pumpkin pie spice |
1 large egg |
1/4 cup canola oil |
1/2 cup canned pumpkin |
1/3 cup light brown sugar |
1/2 teaspoon vanilla extract |
For the Maple Glaze: |
1/2 tablespoon water |
1 1/4 cups powdered sugar |
1 tablespoon dark corn syrup |
1/4 teaspoon ground cinnamon |
3 tablespoons pure maple syrup |
Directions:
- Preheat the oven to 375°F. Grease the mini donut pan with cooking spray. Set aside.
- Combine the flour, oat flour, salt, brown sugar, baking soda, baking powder, cinnamon, and pumpkin pie spice in a mixing bowl. Set aside.
- In a separate bowl, combine the egg, canola oil, canned pumpkin, brown sugar, and vanilla extract. Pour the flour mixture into the bowl. Whisk together until combined.
- Spoon the batter into the donut pan, filling until about half full.
- Place the donut pan in the oven. Bake for 6-7 minutes. Remove from the oven and transfer the donuts to a wire rack to cool.
- While the donuts are cooling, whisk together the water, powdered sugar, dark corn syrup, cinnamon, and maple syrup in a bowl until smooth. Dip the tops of the donuts into the maple glaze. Return the donuts to the wire rack to let the glaze set.
