Pumpkin Donuts with Maple Glaze

Like tasting Autumn in every bite.

Ingredients:

For the Donuts:
3/4 cup flour
1/4 cup oat flour
1/2 teaspoon salt
1/4 teaspoon baking soda
3/4 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon pumpkin pie spice
1 large egg
1/4 cup canola oil
1/2 cup canned pumpkin
1/3 cup light brown sugar
1/2 teaspoon vanilla extract
For the Maple Glaze:
1/2 tablespoon water
1 1/4 cups powdered sugar
1 tablespoon dark corn syrup
1/4 teaspoon ground cinnamon
3 tablespoons pure maple syrup

Directions:

  1. Preheat the oven to 375°F. Grease the mini donut pan with cooking spray. Set aside.
  2. Combine the flour, oat flour, salt, brown sugar, baking soda, baking powder, cinnamon, and pumpkin pie spice in a mixing bowl. Set aside.
  3. In a separate bowl, combine the egg, canola oil, canned pumpkin, brown sugar, and vanilla extract. Pour the flour mixture into the bowl. Whisk together until combined.
  4. Spoon the batter into the donut pan, filling until about half full.
  5. Place the donut pan in the oven. Bake for 6-7 minutes. Remove from the oven and transfer the donuts to a wire rack to cool.
  6. While the donuts are cooling, whisk together the water, powdered sugar, dark corn syrup, cinnamon, and maple syrup in a bowl until smooth. Dip the tops of the donuts into the maple glaze. Return the donuts to the wire rack to let the glaze set.
