Grilled Shrimp and Pineapple Skewers

Sweet and savory with a nice citrusy zing.

Ingredients:

2 tablespoons soy sauce
1 tablespoon lime juice
2 tablespoons honey
1/4 cup olive oil
2 cloves garlic, minced
1 teaspoon ground ginger
1 teaspoon red pepper flakes
Salt, to taste
Ground black pepper, to taste
1 lb large shrimp, peeled and deveined
1 whole pineapple, cut into chunks
8 wooden skewers, soaked in water for 30 minutes

Directions:

  1. Whisk together the soy sauce, lime juice, honey, olive oil, garlic, ginger, red pepper flakes, salt, and pepper in a mixing bowl.
  2. Add the shrimp to the marinade, coat well. Cover the bowl and place it in the refrigerator to chill for 30 minutes.
  3. Alternate the shrimp and pineapple chunks on the skewers.
  4. Bring the grill to medium-high heat.
  5. Cook for about 3-5 minutes per side, until the shrimp is opaque and thoroughly cooked.
  6. Remove the skewers from the grill. Allow them to cool before serving. Enjoy!
