Grilled Shrimp and Pineapple Skewers





Serves 8 |
Sweet and savory with a nice citrusy zing.
Ingredients:
2 tablespoons soy sauce |
1 tablespoon lime juice |
2 tablespoons honey |
1/4 cup olive oil |
2 cloves garlic, minced |
1 teaspoon ground ginger |
1 teaspoon red pepper flakes |
Salt, to taste |
Ground black pepper, to taste |
1 lb large shrimp, peeled and deveined |
1 whole pineapple, cut into chunks |
8 wooden skewers, soaked in water for 30 minutes |
Directions:
- Whisk together the soy sauce, lime juice, honey, olive oil, garlic, ginger, red pepper flakes, salt, and pepper in a mixing bowl.
- Add the shrimp to the marinade, coat well. Cover the bowl and place it in the refrigerator to chill for 30 minutes.
- Alternate the shrimp and pineapple chunks on the skewers.
- Bring the grill to medium-high heat.
- Cook for about 3-5 minutes per side, until the shrimp is opaque and thoroughly cooked.
- Remove the skewers from the grill. Allow them to cool before serving. Enjoy!
