Grilled Salmon with Blackberry Sauce

Serves 4 | 
A one-two combo of sweet and savory.

Ingredients:

1 cup fresh blackberries
3 tablespoons honey
1/4 cup rice vinegar
1 teaspoon sesame oil
1 teaspoon dried lemongrass
1 teaspoon fresh ginger
1 1/2 lb skinless salmon fillets
2 tablespoons chili garlic sauce

Directions:

  1. Add the blackberries, honey, rice vinegar, sesame oil, lemongrass, and ginger to a blender. Pulse and blend until smooth. Set aside.
  2. Brush the salmon filets with chili garlic sauce.
  3. Bring the grill to medium heat. Brush the grill grates with a generous amount of oil or grill spray. Place the salmon on the grill, cook for about 5 minutes per side. Transfer the salmon to a platter to rest for 5 minutes.
  4. Place the salmon on serving plates. Spoon the blackberry sauce over the salmon. Enjoy!
