Enchilada Turkey Meatloaf





Serves 6 |
A yummy twist on the classic dish.
Ingredients:
2 lb 93% lean ground turkey |
2 tablespoons mild enchilada sauce, more for topping |
1 egg, beaten |
1/2 cup quick oats |
1 clove garlic, crushed |
1/2 cup chopped scallions |
1/3 cup canned corn kernels |
1 can mild chopped green chilies, drained, 4 oz. |
1/4 cup canned black beans, rinsed and drained |
1 1/2 teaspoons ground cumin |
1 1/2 teaspoons kosher salt |
1 teaspoon onion powder |
1/3 cup shredded Mexican cheese blend |
Directions:
- Preheat the oven 350° F. Line a sheet pan with parchment paper.
- Place the ground turkey, enchilada sauce, egg, quick oats, garlic, scallions, corn kernels, green chiles, black beans, cumin salt, and onion powder in a large mixing bowl. Mix until well combined. Shape into an oval and place on the sheet pan. Gently press down and slightly flatten the top of the loaf.
- Place in the oven to bake for 60 minutes.
- Remove from oven. Pour a generous amount of enchilada sauce over top. Sprinkle on the shredded cheese.
- Return to the oven and bake for 5-10 minutes, until the cheese is melted.
- Remove from the oven and cut into 12 slices.
