Enchilada Turkey Meatloaf

A yummy twist on the classic dish.

Ingredients:

2 lb 93% lean ground turkey
2 tablespoons mild enchilada sauce, more for topping
1 egg, beaten
1/2 cup quick oats
1 clove garlic, crushed
1/2 cup chopped scallions
1/3 cup canned corn kernels
1 can mild chopped green chilies, drained, 4 oz.
1/4 cup canned black beans, rinsed and drained
1 1/2 teaspoons ground cumin
1 1/2 teaspoons kosher salt
1 teaspoon onion powder
1/3 cup shredded Mexican cheese blend

Directions:

  1. Preheat the oven 350° F. Line a sheet pan with parchment paper.
  2. Place the ground turkey, enchilada sauce, egg, quick oats, garlic, scallions, corn kernels, green chiles, black beans, cumin salt, and onion powder in a large mixing bowl. Mix until well combined. Shape into an oval and place on the sheet pan. Gently press down and slightly flatten the top of the loaf.
  3. Place in the oven to bake for 60 minutes.
  4. Remove from oven. Pour a generous amount of enchilada sauce over top. Sprinkle on the shredded cheese.
  5. Return to the oven and bake for 5-10 minutes, until the cheese is melted.
  6. Remove from the oven and cut into 12 slices.
