Garlic and Roasted Bell Pepper Farfalle

The lighter side of comfort food.
Ingredients:
3 bell peppers, any color |
8 oz Farfalle pasta |
3 tablespoons butter |
2 cloves garlic, minced |
3 tablespoons parmesan cheese |
1 cup light cream |
Salt, to taste |
Ground black pepper, to taste |
Directions:
- Preheat the broiler. Line a baking sheet with aluminum foil.
- Cut each bell pepper in half lengthwise and remove all seeds and membranes. Slice the bell peppers into strips.
- Arrange the bell pepper slices skin side up on the baking sheet. Place in the oven and broil for 6 minutes. Remove from the oven and set aside.
- Cook the farfalle according to package directions. Drain the water and transfer the pasta to a large bowl.
- Bring a small saucepan to medium heat. Melt the butter then add the minced garlic. Cook and stir for 2 minutes. Then add the Parmesan cheese. Cook and stir for 1 minute. Stir in the light cream and continue to cook until the sauce boils and thickens.
- Remove the saucepan from the heat and season with salt and pepper. Stir together.
- Pour the sauce over the pasta, add the bell peppers, toss to coat.
- Spoon an even amount of Farfalle and bell peppers onto serving plates. Enjoy!
