Garlic and Roasted Bell Pepper Farfalle

The lighter side of comfort food.

Ingredients:

3 bell peppers, any color
8 oz Farfalle pasta
3 tablespoons butter
2 cloves garlic, minced
3 tablespoons parmesan cheese
1 cup light cream
Salt, to taste
Ground black pepper, to taste

Directions:

  1. Preheat the broiler. Line a baking sheet with aluminum foil.
  2. Cut each bell pepper in half lengthwise and remove all seeds and membranes. Slice the bell peppers into strips.
  3. Arrange the bell pepper slices skin side up on the baking sheet. Place in the oven and broil for 6 minutes. Remove from the oven and set aside.
  4. Cook the farfalle according to package directions. Drain the water and transfer the pasta to a large bowl.
  5. Bring a small saucepan to medium heat. Melt the butter then add the minced garlic. Cook and stir for 2 minutes. Then add the Parmesan cheese. Cook and stir for 1 minute. Stir in the light cream and continue to cook until the sauce boils and thickens.
  6. Remove the saucepan from the heat and season with salt and pepper. Stir together.
  7. Pour the sauce over the pasta, add the bell peppers, toss to coat.
  8. Spoon an even amount of Farfalle and bell peppers onto serving plates. Enjoy!
